This easy Mini Banana-bread Muffins recipe contains ingredients that you will more than likely have in your cupboard already – perfect for those times when you’re expecting visitors to pop in but don’t have anything in the house except those overripe bananas.
I can handle a little brown here or there, but when bananas go very brown and mushy, I can’t eat them. So what can you do? You can make a smoothie, can make banana soft serve ice cream or you can make these Mini Banana-bread Muffins!
These mini muffins are extremely moist. I was blown away by how soft they were inside.
Ingredients
(Servings 24)
125g Unsalted Butter
1 Cup Brown Sugar
2 Cups Flour
2 Eggs
2 Large Ripe Bananas, Mashed
1tsp Vanilla Essense
1tsp Bicarbonate of Soda
1tsp Baking Powder
Method
1. Preheat oven to 180 ºC
2. Cream butter and sugar together.
3. Add eggs one at a time and beat well.
4. Add bananas and vanilla essense.
5. Fold in dry ingredients.
6. Bake in a greased/silicone/wrapped mini muffin pan.
Bake for 20-25 minutes. When their golden brown they’re good to go.
Variation
Grate an apple, pear or carrot as well and put in above the mixture.
